Our Story
After a successful opening of The Dish Room in Burlington, CO in 2016 & surviving COVID lockdowns, we were approached to bring our concept to the Historic Cow Palace Inn. After some consideration & research on the Palace & seeing what it meant to the region, we were excited to be part of bringing the Palace back to life.
